植物组织培养在无菌培养基上对植物的离体组织（器官或细胞）进行培养的技术。1958年，美国F.C.斯图尔德等用组织培养方法从胡萝卜根的韧皮部细胞获得了正常的胡萝卜植株以后，许多植物的细胞培养都得到了类似结果。这证明了植物的任何一个有核细胞都具有该植物的全套遗传基因，在一定培养条件下可以长成与母体一样的植株。植物细胞的这种全能性，是组织培养的理论依据。植物的顶芽、侧芽、叶、根、下胚轴、子叶等营养器官和花粉、花药、子房、胚珠、孢子等生殖器官，髓、形成层、表皮等组织以及分离的细胞和原生质都可用作组织营养的材料。在控制的环境条件下，当供给所需的营养物质时，这部分器官、组织或细胞经诱导可以产生愈伤组织,即停止分裂的细胞重新恢复细胞分裂活动,这个转变称为脱分化。愈伤组织在适合的培养基上又可经诱导分化出芽和根，最终成为完整植株，这个过程称为再分化。由于组织培养中植物的离体器官、组织或细胞从自养变为异养，在培养基中必须包括：①各种无机盐；②维生素类,如维生素B1、维生素B6、烟酸、生物素等;③作为碳源的蔗糖或其他糖类；④根据需要补充加入的氨基酸、水解乳蛋白以及生长素、细胞分裂素、亦霉素等激素或生长调节剂。培养材料必须先经消毒，除去附在表面的微生物。培养基也要事先高温灭菌。在整个培养过程中要避免微生物的污染。同时要根据不同培养材料给以适当的温度、光强、湿度和日照长度等环境条件。植物组织培养技术在科学研究和生产实践上具有多方面的用途：①用于器官分化、形态建成、物质代谢以及细胞遗传、病毒学等方面的研究。近来由于体细胞杂交技术的发展以及细胞器和 DNA等物质的引入原生质体，植物组织培养技术已成为植物遗传工程学的重要技术。②用于快速繁殖无性系，即从一个器官、组织或细胞经过多代培养而得到的后代。现一些无性系已在生产实践上广泛应用。如20世纪60年代发展起来的"兰花工业"，就是用从兰花的原球茎得到的无性系进行繁殖的工业化生产。③用于培养无病毒植株。植物的幼嫩部分一般尚未感染病毒。在马铃薯生产上用茎尖培养方法获得无病毒苗再移栽到大田，可提高产量。无病毒苗的培养还有利于地区之间或国家之间的相互引种。④用于改良植物品种。应用较广的是通过花药培养获得单倍体植株的方法。此外，还可用胚珠培养以及试管受精克服杂交不育性；用细胞培养诱发突变，筛选抗性强或品质优的细胞株；以及通过原生质体融合（体细胞杂交），创造新类型植物等。试管苗的冷冻贮藏则是一种较为方便的种质保存方法。⑤用于植物性药物生产。如用组织培养方法生产鱼藤酮、甘草甜素、人参、薯芋皂苷元等。
